Among curved swords the Shamshir and Scimitar have a different move set than the others like the Bandit. They swing a bit faster but more than that your character steps into the attacks more and covers more distance when swinging. Theoretically both bandits curved sword have seppuku but other ash of wars would be fine, same with God skin peeler unless better ash is available. I'm not sure what would be good with the best ashes talismans or buffs nor do I know how. I'm still early in my blood God run (godrick and rennala beaten) so any cool ideas would be appreciated.

Occult + all arcane would have better physical damage. It would be better against bosses resistant or immune to bleed, like elden beast. Bandits bleed would stack bleed better. Scavengers bleed wouldn't be affected by the innate bleed. So I would use Bandits for most bosses.
